FAST GROWING PERFECT FOR STIR FRIES: From seed to fork in 6-8 weeks! Red Pak Choi is a reliable easy to grow beautiful-looking oriental vegetable looks delicate and very elegant with its red and green midribs and sculptural fluted shape. A hardy salad vegetable and can withstand even the fiercest of weather, making it the perfect winter salad ingredient. Mature plants can be cooked for a crisp and tasty spinach-like leaf vegetable: the central midribs are delicious sliced into stir-fries.
QUICK MATURING: Red Pak Choi produces beautifully flavoured red-tinged leaves as the plant matures and has good disease resistance. You can break off the leaves as you need them so that the plant continues to grow. Red Pak Choi makes a visually different addition to any salad or stir fry. Pak Choi has been grown in China for about 1500 years. It can be used whole when it grows to about 10cm tall or grown larger so that the individual leaves can be used. Pak Choi can be used raw in salads, but has a more spicy flavour when cooked.
HOW TO PLANT: Sow into pots or seed trays in early spring. Once outside conditions warm up harden off carefully and then transplant to their final growing space allowing 15cm between plants. Later in the season sow direct into shallow drills and thin seedlings to final spacings: keep the thinnings and use as baby leaves in salads. Pak choi has shallow roots so makes an excellent and decorative choice for container growing. Allow four plants to a 35cm pot or grow in rows in troughs.
TOP GROWING TIPS: Plant in a sunny or partially shaded spot outside and feed plants if planting in early spring with a high nitrogen feed to encourage growth. Water thoroughly every ten days and only in the morning; too much moisture in the evening can encourage slugs and make sure to cover leafy plants like cabbage with cloches before any frosty weather. Protect from slugs and net against pigeons.
GO BACK TO YOUR ROOTS: Red Pack Choi or Chinese Cabbage is a great starter vegetable to grow. Planting veg, herbs and flowers is a wonderful way to spend time in your garden, cultivate mindfulness and appreciate the little things just like in years gone by. Working with the earth and growing things is immensely satisfying – teach your children or grandchildren this priceless skill of harvesting food in their own gardens, allotments, greenhouses, inside the home in pots or even in community gardens!
